VICTORY DANCE TIME !
Fluffy pancakes in the house! Instant oat flour is amazing. Just how amazing? As amazing as melt-in-your-mouth buttery pancakes. We have been having this everyday for a week now. I use MyProtein Instant Oats. To my surprise it was already in flour form. And best of all, it is affordable and not insanely expensive as other brands.
Ingredients:
Wet:
- 2 eggs
- 1 tablespoon Coconut Oil (or your choice of healthy oil)
- Date + Milk puree (process 5 dates with half cup milk until pureed)
- extra non dairy milk
Dry:
- 1 cup Gluten Free Instant Oat Flour. I use MyProtein Gluten Free Oats.
- Half teaspoon baking powder
- pinch of salt
Recipe:
Process the date and milk into puree. I soak the dates in milk for about 5 minutes then blend on my high speed blender. Set aside. In one bowl whisk together all the wet ingredients. I use coconut oil because it is basically brain food. Set this aside. In a separate bowl, mix together the dry ingredients. Now add the dry ingredients to the wet ingredients and whisk to make make batter. Batter should be runny but not too water. There should be no lumps.
Heat a small frying pan and pour in the batter. Flip with brown. Top with anything you like. We love butter !
The pancakes look delicious! I haven’t got instant oats can l use regular oats?

Yes ! try with regular oats. make sure to make it into flour. you can easily do so by processing on high in blender, grinder or food processor 🙂
