Breakfast Coffee Cake – Gluten Free

I didn’t need any equipment for this recipes, just threw everything in a bowl and stirred well.

Ingredients

  • 1 cup millet flour
  • Half cup rice flour
  • 1 tspn baking powder
  • 2 whole eggs
  • 1 cup oil / butter of your choice
  • 1 cup sweetener of your choice / honey
  • half cup freshly brewed strong black coffee
  • chopped walnuts or nuts of your choice
  • optional : dark cocoa powder

Method

  • ​beat 2 whole eggs with 1 cup oil / butter of your choice
  • add 1 cup sweetner of your choice
  • mix well
  • add half cup of freshly brewed coffee
  • had a bit of dark chocoloate or go crazy
  • mix well
  • add millet flour,  rice flour, and baking powder and mix well
  • add chopped almonds or walnuts
  • mix well
  • pour into tray or bread tin
  • bake until stick from center comes out clean
  • I have a tiny oven so i baked at 220 degrees for 25 mins and lowered the temp and baked the top to make it crispy
  • Note: Batter is runny, so don’t worry about it.
