Snow Peas & Chicken Stir Fry

Is there any limit to being obsessed with food? God, I hope not! I am obsessed with how easy this lunch prep was. As with most of my recipes, I am coming up with it right then and there, this was another blessed result of rushing through the kitchen to get fresh food on the table.

Seriously easy and exceptionally yummy is all I have to say about this quick 10 min meal. All you need is 4 ingredients and 10 mins. The flavor king of this dish is off course garlic. I wanted to keep the taste of garlic fresh and solitary so I refrained from adding onions or any other herbs. How can so little ingredients taste so yummy? And no mess in the kitchen, not a hundred things to clean up? Gimme more quick n easy recipes por favor!

I didn’t forget about the snow peas – I am obsessed! Winter snow peas just have that perfect tenderness and cook so quickly! Here an easy pointer: clean, cut and coat chicken in easy chicken seasoning and keep aside. If you batch prepare your chicken with seasoning for weekly meal prep  then that’s great! If not then you can coat the chicken and set it aside while preparing the peas. This is enough time for the chicken to soak in flavour, but make sure chicken is room temperature and not freezer cold.

Here is a quick and simple chicken seasoning instant DIY (for 100 grams chicken)

  • 1 tspn cup garlic powder
  • 1 tspn onion powder
  • 1/4 tspn  salt
  • half tspn  black pepper
  • half tspn chilli powder or paprika

Heat a skillet or pan and add 2 teaspoon butter / ghee / coconut oil / oil of your choice. Add the peas and green chilli and stir fry for 1 minute.

Add chopped garlic and stir to mix well.

Cover and cook for 2 to 3 minutes. Snow peas will tender soon and garlic will brown in the edges.

Add chicken to the peas and mix well. Cover and cook chicken in peas for 5 mins, or until juices run clear and chicken is cooked. Slice inside to check chicken is cooked.

Done! It takes in total of 8 mins to make this meal.

Get your rice ready and lay the juicy chicken and peas over that bed of white fluffy rice.
